Happy Thursday!
As I type this, I have cauliflower gnocchi browning in a skillet. (I’m actually also currently uploading a video of such to my Instagram stories if you want to follow along!)
I use the cauliflower gnocchi you can get in the frozen section at Trader Joe’s - I had tried it once years ago, and I made it according to package directions and I did NOT like it. It tasted like mush to me. But I came up with my own hack for making it in the skillet that is so much better - and so much easier. That’s what I’m showing you on video this morning! (er…afternoon…this day is getting away from me…)
Bryce and I had a great time this morning hopping on a team meeting for some PR friends and answering some of their burning questions about all that peeves us in the world of pitching/mailings/events/followups etc. This is something we both do occasionally - both individually on our own and also together as a unit - so if you ever want to look into setting something up with either of us or us together, let us know!
LOTS of new stories I'm working on today and over the weekend that I'd love expert responses for.
1 - For Pawp, I'm working on a story on: Everything You Should Know About Dog Walking. Basically answering the most frequently asked questions around it. I have a list of specific questions I'd love to ask a vet or an animal behavior expert or trainer...please email me and I'll elaborate!
2 - For AllRecipes, I'm working on a story on The Best and Worst Vegetables for People With Diabetes – An RD would be great to quote here, maybe one with a diabetes education background. I'd love them to weigh in on what makes them good and what makes them bad. Also I’d love them to touch on things like potatoes and sweet potatoes that IF you eat them, here’s how to do it in a better way (not fried, etc.)
3. Also for AllRecipes, Menu Words Diabetics Should Avoid – What words are signs the food you’re thinking of ordering is a bad idea? Crispy? Creamy? I would love to chat with an RD to explain why these are usually flashing red lights. I don’t want to leave people thinking they have to eat steamed fish and veggies, so how can they navigate a menu without feeling deprived?
4. For Today.com, I'm rounding up deals, discounts, and freebies at CHAIN RESTAURANTS in honor of National Taco Day.
5. For HerMoney, I'm working on a story on Is Buying Bulk The Secret To Maintaining Your Food Budget? We're often taught that the best way to stretch a food budget is to eliminate food waste by only buying what we need at that moment. But, as a home cook, I've actually discovered the reverse of that theory is also true. I mean that in the sense that buying certain bulk items to save money long term on grocery costs. I'd love to talk to a nutritionist or chef and also a food safety expert about what items are best bought in bulk, how to make it store it for food safety but also making it stay in its best form longer, and just how long we can keep different things. I bulk buy everything from canned tomatoes to family packs of meat and fish to portion out and freeze, and it's amazing how much I save by planning ahead.
6.For RetailMeNot, the coffee lovers roundup is wrapped up. However, still accepting pitches for great fruitcakes to buy online and also good gifts for people who like to read (these are gifts other than books…).
