Happy Monday: Have a sweet new year, what I'm working on this week (and my recipe for apple strudel egg rolls!)

Good morning and L’Shana Tova to all those celebrating.
I just got back this weekend from a fabulous but super-fast trip to Louisville and have since been hanging with my mom, in serious holiday cooking mode.
We've been making everything from strudel (which we pivoted a bit into strudel egg rolls) to matzo balls to gribenes and schmaltz (to adorn our kugel), and roast chicken with matzo stuffing, and prepping a brisket for the second dinner. I’ve been sharing as much as I can as we go on my Instagram stories.
(Bonus share: The recipe for my apple strudel egg rolls will be at the bottom of this email if you scroll all the way down! Just my way of wishing anyone reading a sweet new year, and welcoming you to my family’s table.)
I’m not religious for the most part. Oysters and shrimp cocktail are a regular part of my night out rotation, but I very much adhere to culture and traditions and I do the holidays pretty hardcore.
Rosh Hashanah is such a wonderful holiday because it's all about new beginnings and fresh starts. It’s about letting go of hurt and sadness from the previous year and starting a new year with hope, and hopefully happier and healthier surroundings.
Speaking from a food journalist perspective, there's also all sorts of awesome food symbolism this holiday, from apples and honey (for a sweet new year) to fish (to be fruitful and multiply), to carrots (for increasing your blessings). I actually have a roundup on Forbes this week about some great treats to enjoy for Rosh Hashonah and the week that follows.
I have a pretty whirlwind week coming up. The holiday ends at sundown tomorrow night and I leave early Wednesday morning for a super-quick 24-hour trip to Knoxville.
The official reason I'm going is under embargo for a few weeks, so I can't share more than that -- but I can share that I'll be reunited with my gal Amber Love Bond on this trip (for the first time since June when she came out to attend my big signature cocktail launch event in NYC!), and I'm SO excited.
Do I have any friends in the Knoxville area? It's VERY unlikely we'll have any free time since we're there for 24 hours and it's for work reasons with a pretty solid run-of-show, but let me know if you are in the area and I'll keep you posted if it's possible to get together (it'd mostly be midday Thursday before my return flight home.)
But all this means this week will be pretty hard to juggle, so let's get started with everything pending (as I mentioned in this weekend's Industry Insights edition, some new assignments are pending for this week as well!)

Bookmark it and make your life a bit easier.

I've been popping into a lot of PR team virtual meetings and some other fun stuff (This summer, I even joined in on an agency’s team retreat right here in Brooklyn — it was so fun and I made so many new friends!) and making myself available to answer all sorts of questions about pitching, events, and trips from a media perspective. I like to keep these things chill and comfortable and relaxed all by sharing perspective and learning from one another.

Aly’s Apple Strudel Egg Rolls
2 tablespoon extra virgin olive oil, more if needed later
3 apples, peeled, cored, thinly sliced
¼ cup brown sugar
1 teaspoon ground cinnamon
¼ teaspoon nutmeg
4 tablespoon of your favorite rum
⅓ cup raisins
1 package egg roll wrappers
Confectioner's sugar for garnish optional
Instructions
1. Preheat the oven to 375 degrees F.
2. Make the filling. Grab a pan, heat the extra virgin olive oil and add the sliced apples, rum, brown sugar, cinnamon, and nutmeg. Continue cooking over the medium heat, stirring often, for about 2 minutes, until the apples start to release juice. Stir in raisins. You don’t need to cook the apples all the way. The oven will take care of that.
3. Line a sheet pan with parchment paper. Pour the juices from the apple filling in a small bowl and mix with a bit of extra virgin olive oil (you'll need this mixture to brush the egg roll wrappers).
4. Lay each egg roll wrapper flat out in the sheet pan. Brush with the mixture you prepared (apple filling juice and olive oil).
5. Now, spoon the apple filling toward the middle of an egg roll wrapper. Brush ends with extra virgin olive oil. Fold into egg rolls.
6. Bake in the heated oven on the middle rack for 40 minutes. Then, garnish with the confectioner's sugar and raisins.
