Wednesday: The one thing I'm not seeing enough of at events - and everyone needs to start doing ASAP.

I wanted to talk to you about something very serious and very important — and very connected to our industry and community and the people in it.
I’m sure everyone heard the story last week about the influencer who died after an allergic reaction she suffered while at a media event.
This woman, who is known by, and a friend to, many in our industry - did something we all do every day. She attended a media event. It was just doing her job.
What happened to Dominique next is something that all those who have food allergies live in fear of - and it was entirely preventable. At the event, she unknowingly ate food that contained an allergen, had a severe reaction, and died soon after.
We all have to do better at food safety and avoiding allergen cross contamination when planning and executing and hosting events. We need to - not just at dinners and on press trips but at these sort of events - communicate with attendees beforehand about food allergens, intolerances, and sensitivities. And then we have to make sure, if food is buffet style or passed apps, that potential allergens are clearly marked, perhaps on a placard on the tray. “This item contains dairy, shellfish, peanuts, etc".”
Far too many people look at food allergies as an inconvenience, when the reality is that lives are at stake — a woman died because she unknowingly ate an allergen at an event. This could happen to any of us at any event any day.
It’s said that this woman communicated her severe allergy to the team before the event, and it’s important that those doing the inviting and the planning do their due diligence to ask attendees about these allergies and also communicate that to event, venue, and food service staff. But it’s also important at events to keep those potential allergens separate and avoid cross contamination.
No one wants to take their lives in their hands just to attend your holiday party. A little bit of forethought and considerate planning will not go a long way — but is essential going forward.

I’m putting out bites/drinks of the week feelers, which is sort of a drink/dish spotlight piece. (Some examples are this Peruvian-inspired sweet potato in Savannah and a molecular banana daiquiri in Chicago.) Basically if you are pitching me something for this, think along the lines of: Is this dish/bite something new? What interesting techniques are used to make it come together? If the technique is simple, what’s the hook? An interesting ingredient? Something being made in house or in an interesting way? What’s the story behind the dish? What inspired it? Is there a cultural/family story behind the dish? An ingredient the chef got their hands on? Love to hear what you might have for me!
